Master graduation presents the results of conservation methods of quality of herbs. Research object: • Sweet basil (Ocimum basilicum) – ‘Lemon‘, • Sweet basil (Ocimum basilicum) – ‘Toscano‘, • Coriander (Coriandrum sativum) – ‘Marino‘, • Spearmint (Mentha spicata) – ‘Garden Mint‘, • Levander (Lavandula angustifolia) – ‘Munstead Strain‘. Research aim: Take to the method of conservation and to evaluate its influence on the quality of herbs. Research methods. Standardized methods has been established herbs biochemical composition (dry matter (%), ascorbic acid (mg g-1), crude fiber (%),crude ash (%),crude protein (%), chlorophyll a and b, and total chlorophyll (mg g-1), was color change analysis, evaluation of color coordinates. All research data was tested statistically. Research results. Coriander 'Marino' characterized by significantly higher of dry matter, ascorbic acid , crude ash , chlorophyll content , which is essentially the largest green (a * ) color intensity was noted spearmint 'Garden mint' and the lavender ' Munstead Srain ' leaves. The most appropriate way of conservation herbs keeping quality was lyophilization. The evaluation of the method of curing effect on the quality of herbs found to be essentially the highest dry matter , ascorbic acid content and the largest green (a *) intensity determined using the lyophilization method.
