The invention discloses a leveling system, a leveling method and a road construction machine. The leveling system comprises a controller, a leveling sensor, an actuating device and a flatness detection device, wherein the controller acquires the sensitivity of the leveling sensor and regulates the sensitivity of the leveling sensor according to the pavement flatness detected by the flatness detection device. The leveling method is generalized as follows: if the flatness obtained after the road construction machine drives the preset distance of an ith section is more approximate to a flatness target value compared with the flatness obtained after the road construction machine drives the preset distance of an (i-1)th section, the current-time regulation trend and last-time regulation trend of the sensitivity of the leveling sensor are kept same; if the flatness obtained after the road construction machine drives the preset distance of the ith section is further from the flatness target value compared with the flatness obtained after the road construction machine drives the preset distance of the (i-1)th section, the current-time regulation trend and last-time regulation trend of the sensitivity of the leveling sensor are reverse.
