The invention relates to a smoke exhaust system, a smoke exhaust assembly and a smoke exhaust control method. The smoke exhaust assembly comprises a flow channel switching assembly, a filter and a controller. When the flow channel switching assembly works in a second working state, a first connecting end is communicated with a third connecting end, and a second connecting end is cut off. The first connecting end is used for being communicated with an oil smoke outlet of an extractor hood, the second connecting end is used for being communicated with a public flue, and the third connecting end is used for being communicated with the external environment. The filter is arranged on a pipeline, communicated with the external environment, of the third connecting end in a series connection manner, the flow channel switching assembly is electrically connected with the controller, and the controller is used for controlling the flow channel switching assembly to work in a first working state or the second working state. The controller controls the flow channel switching assembly to work in the second working state, so that oil smoke of the extractor hood is filtered through the third connecting end and the filter and then discharged into the external environment, and the oil smoke in the public flue can be prevented from flowing backwards into a kitchen space.
