The invention relates to a construction method of an immersed tube joint in an immersed tube tunnel and an immersed tube joint structure. A sleeve head sleeves one end of each immersed tube, and a grouting pipe is arranged on at least one end of each immersed tube in advance. After pre-operation, all the immersed tubes are sequentially sunk into underwater preset positions at intervals end to end, so that the end, with the sleeve head, of one immersed tube is opposite to the end, without the sleeve head, of the other immersed tube; then in any two adjacent immersed tubes, the end, without the sleeve head, of one immersed tube is connected into the sleeve head in a sleeved mode, so that the two immersed tubes are mutually spliced in the same sleeve head; after splicing, pressure grouting is conducted between every two adjacent immersed tubes through a grouting pipe, so that the immersed tubes are tightly combined under the action of concrete grout; and after pressure grouting is full, edge sealing treatment is conducted between the sleeve head and the two immersed tubes, so that gaps between the sleeve head and the immersed tubes are blocked. The construction method has the advantages of high construction splicing precision, convenience in construction and difficulty in water leakage after operation.
