The invention provides an underground water over-mining early warning system and an underground water level monitoring method. The underground water over-mining early warning system comprises a tube well, a well lid, a gas pressure sensor, a control assembly, a warning assembly and a gas compensation assembly. A wellhead is arranged at the upper end of the tubular well; the well lid covers a well mouth of the tube well and is in sealed connection with the tube well; the gas pressure sensor is arranged in the tube well; the control assembly is in communication connection with the gas pressure sensor; the warning assembly is in communication connection with the control assembly; the gas compensation assembly is communicated with the tube well, electrically connected with the control assembly and used for compensating the change of the total gas amount in the tube well caused by microorganism respiration in the tube well. According to the underground water level monitoring method, the underground water overdraft early warning system is used for measuring the underground water level. According to the groundwater overdraft early warning system and the groundwater level monitoring method, the water level of groundwater can be monitored under the condition that the tube well is closed.
