The modified chitosan provided by the invention is a compound in which a chitosan molecular chain is bonded with an amino acid chelation-like structure, and the amino acid chelation-like structure can play a synergistic role with the steric effect of the spatial three-dimensional structure of the chitosan; due to the addition of the modified chitosan, the concentration of metal ions in early concrete slurry can be in a dynamic equilibrium state, and the effect of reducing the early hydration rate is achieved; and a certain amount of hydroxyl groups are reserved on the molecular chain of the modified chitosan, so that a large amount of water can be adsorbed while metal ions are chelated, and then the later hydration reaction of the concrete is promoted. The water reducing agent obtained by compounding the modified chitosan provided by the invention with other components such as polycarboxylic acid has excellent water reducing performance, retarding performance and slump retaining performance, and has a good application prospect.
