The invention discloses a dam break water tank model test device which comprises a water tank, the water inlet end of the water tank is communicated with an underground reservoir, the water outlet end of the water tank is communicated with a grit chamber, the underground reservoir and the grit chamber are communicated through a pipeline, and the underground reservoir, the water tank and the grit chamber form a circulating system through pipelines; a model dam is filled in the water tank, and a gate instantaneous starting device is arranged between the model dam and the water inlet end of the water tank; the monitoring assembly and the data acquisition system are in signal connection and are used for recording the state of the model dam. The model dam is filled in the water tank to simulate an actual dam, the flood flow during dam break is simulated through the gate instantaneous starting device and the underground reservoir inflow, multiple types of dams and the dam break flow are further achieved, and the problem that in the prior art, a dam break water tank device is too single in function is solved. The invention further discloses a dam break water tank model test method which has the advantages of being high in repeatability and high in accuracy and precision of test measurement data.
