The invention relates to the technical field of operation machinery, and provides a variable bucket and an operation machine.The variable bucket comprises a bucket body, and at least one end of the bucket body is open; the side plate has a first working state and a second working state; wherein the first working state corresponds to the closed opening of the side plate, and the second working state corresponds to the opened opening of the side plate; the rotating mechanism is arranged on the bucket body, and the output end of the rotating mechanism is connected with the side plate; and under the action of the rotating mechanism, the side plate is switched between a first working state and a second working state. According to the variable bucket and the operation machine, the track of the rotating angle of the side plate in the deformation process is controlled through forward and reverse rotation of the rotating mechanism, it is guaranteed that the side plate operates on the preset track, even if material residues exist in the variable bucket, effective closing of the side plate and the opening cannot be affected, and meanwhile the service life of the variable bucket is prolonged. The side plates rotate to achieve switching between the first working state and the second working state, and collision and abrasion between the side plates and the bucket body can be avoided.
