The overwater pile sinking method comprises the following steps: S1, collecting old pile data by adopting an overwater three-dimensional scanning checking technology based on underwater three-dimensional scanning; s2, each pile position is rechecked according to the three-dimensional scanning and measuring data of the old piles, and pile foundation parameters which may be large in pile collision are modified; s3, carrying out pile sinking operation by adopting overwater hoisting piling equipment according to the pile foundation parameters modified in the step S2; s4, when an unknown obstacle is encountered in the pile sinking process in the step S3 and pile sinking is difficult, the pile foundation is hoisted back through the overwater hoisting pile driving equipment, the steps S2 to S3 are repeated, and adjustment and rechecking are repeated until the pile sinking is smooth; and S5, after pile sinking of the pile foundations of all the pile positions is completed, the higher pile foundation parts are cut off according to the designed elevation.
