The invention relates to the technical field of hydraulic control, and discloses an energy-saving control system and method for an excavator hydraulic system, and the energy-saving effect is achieved by controlling the temperature of hydraulic oil and the temperature of a cooling system of the excavator hydraulic system. The method mainly comprises the steps that the optimal working temperature range of hydraulic oil of a hydraulic system is obtained, and under different testing strategies, the influence of the hydraulic oil temperature change on the excavation weight and the time needed by the cooling system for reducing the hydraulic oil temperature are measured under the condition that the cooling system of the excavator does not work. In actual work, the temperature of a hydraulic system is adjusted according to a hydraulic oil temperature control strategy, and the action of an excavator arm is controlled according to a manual or automatic mode; the system achieves automatic energy-saving control through the temperature sensor, the hydraulic clutch device and the control module, and the working efficiency and the energy-saving effect of the excavator are effectively improved.
