To provide an old asphalt amount estimation system, asphalt plant, and old asphalt amount estimation method that can easily estimate the amount of old asphalt contained in recycled aggregate with a small work load.SOLUTION: In an asphalt plant 100 in which an aggregate containing a recycled aggregate and a new asphalt are mixed by a mixer 7 to produce an asphalt mixture, an old asphalt amount estimation system 15 comprises: image pickup devices 9a, 9b, 9c for imaging a recycled aggregate R; an image analysis unit 11 for performing image analysis processing on the image data imaged by the image pickup devices 9a, 9b, 9c; and an old asphalt amount estimation unit 12 for estimating the amount of old asphalt contained in the recycled aggregate R based on the result of the image analysis processing of the image analysis unit 11.SELECTED DRAWING: Figure 1
