A study of bread baking costs in Nigeria: Some considerations for development

A Nigerian case study of costs, returns and efficiency in bread baking is discussed in this paper. Large bakeries suffer from excess capacity, high overhead costs and management problems which prevent them from reaping economies of scale. Small bakeries are more efficient in resources use, although they often sacrifice quality for lower costs. The Nigerian case study indicates that small firms can play a pivotal role in agro-industrial development in Africa, particularly with regard to village and intermediate technology adoption, cost reduction, and output increases, if policies are instituted for quality improvement, manpower training etc.
