Design constraints for continuous ice crystallizers
For purposes of optimizing crystallizer design it is desirable to determine the interrelationship between the mean crystal size of the product and residence time. This paper provides such relationships both from determinations of the permeabilities of ice produced in a continuous crystallizer over a wide range of operating conditions and by calculations of crystal size from the kinetics of nucleation and growth. The effective crystal diameters inferred from the permeability measurements are found to be proportional to residence time raised to the 0.18 power. This is in good agreement with an exponent on residence time of 0.23 calculated from correlations of measured nucleation rates and of heat and mass transfer limited growth rates. The observed weak dependence of crystal size on residence time permits the operation of crystallizers at high production rates without seriously affecting ice product quality.
