Reorienting export production to benefit rural producers: Annatto processing in Peru
AbstractThis paper describes a simple, labor-intensive production process for annatto, a natural food colorant exported from Peru and other countries. The prospects for the financial and economic viability of decentralized annatto processing are good, provided that managerial problems can be overcome. Moreover, the transfer of this technology to rural areas and changes in arrangements for purchasing the raw materials can increase the benefits to farmers.
