The invention discloses a debris flow dredging system and dredging method. The debris flow dredging system comprises a plurality of sedimentation inclined plates mounted in a sandstone buffering area;the side surfaces of the sedimentation inclined plates are triangular; a plurality of sedimentation slide grooves are transversely distributed on the top surfaces of the sedimentation inclined plates; the interiors of the sedimentation slide grooves are arc; the external edge of the sandstone buffering area communicates with a plurality of flood drainage pipes; filter screens are arranged in inlets of the flood drainage pipes; a first dam and a second dam are arranged between the sandstone buffering area and a flow guide buffering area; a plurality of filter grilles are mounted between the first dam and the second dam; a plurality of flood discharge holes are formed in both the first dam and the second dam; overflow ports are formed in the top of the first dam and the top of the second dam; a plurality of buffering units are distributed in the flow guide buffering area in an equally spaced manner; each buffering unit comprises two buffering steps; side views of the buffering steps aretrapezoidal; rectangular flow drainage grooves are formed between the two buffering steps; the bottoms of the flow drainage grooves communicate with flow drainage pipes; and electromagnetic control valves are mounted on the flow drainage pipes.
