Wine-brewing old cellar wall and capacity-increasing transformation method
The invention relates to the technical field of wine brewing processes, in particular to a wine-brewing old cellar wall and a capacity-increasing transformation method. The transformation method comprises the following steps of ramming a group of yellow clay blanks in advance, taking old cellar mud as an adhesive, building a wall by adopting a trapezoid, levelling a top layer by using concrete, and uniformly smearing the wall by using cultured old cellar mud; conducting cellar capacity increasing, namely building a wall layer by layer with the yellow clay blanks to a required height, leveling the outer wall and the top layer with concrete, and uniformly smearing the inner wall with old cellar mud. The transformation method has the following advantages that the problems that when yellow clay is used for ramming again, huge vibration and external force easily cause cracks of the other three cellar walls and falling and even collapse of old cellar mud are solved, and the cellar wall transformation time can be greatly shortened by building the cellar walls with the manufactured yellow clay blanks; the microbial flora in the cellar can be protected; the yellow clay blanks are good in water-retaining property and long in service life, aging of the old cellar mud is facilitated, and the modified cellar wall hardly influences the yield and quality of Luzhou-flavor liquor production.
本发明涉及一种酿酒工艺技术领域,具体地说,涉及一种酿酒老窖池池墙及增容的改造方法。本发明所述改造方法是预先夯制一组黄土坯,用老窖泥做粘合剂,采用梯形垒墙,顶层用混凝土抹平,墙壁用培养好的老窖泥抹匀;窖池增容也是用黄土坯逐层垒墙到所需高度,外壁及顶层用混凝土抹平,内壁用老窖泥抹匀。本发明所述的改造方法具有以下优点:解决了重新用黄土夯制时巨大的振动和外力易导致其它三道池墙出现裂纹、老窖泥脱落甚至垮塌的问题,而且用制作好的黄土坯垒砌池墙能大大缩短池墙改造时间,有利于对窖池的微生物菌群进行保护;黄土坯保水性好,有利于老窖泥的老熟,使用寿命长,改造好的池墙对浓香型白酒生产的产量和质量几乎没有影响。
