The invention discloses a production method of a gypsum board in a plateau environment and a gypsum plaster board, and the production method comprises the following steps: step S10, stirring and mixing raw materials to obtain gypsum slurry, pouring the obtained gypsum slurry between two layers of surface protection paper, and cutting off after forming to obtain a plurality of gypsum slurry blocks; s20, the gypsum slurry blocks are dried for 10-20 minutes in a first drying area, and the temperature of an outlet of the first drying area is 123-130 DEG C; and S30, the gypsum slurry blocks out of the first drying area enter a second drying area to be dried for 25-35 minutes, the temperature of an outlet of the second drying area is 96-103 DEG C, and gypsum boards out of the second drying area are produced after being subjected to edge cutting and edge covering. By adding the starch with the lower gelatinization temperature into the gypsum slurry, the starch migration rate of the gypsum slurry block in the drying process can be effectively improved, meanwhile, the evaporation rate of moisture on the surface of the gypsum slurry block can be reduced in cooperation with adjustment of the drying temperature, the bonding strength between the dried covering paper and the gypsum block is guaranteed, and the rejection rate is reduced; and the rejection rate of the produced gypsum board can be reduced to 2%.
