The present invention relates to a red clay kiln for roasting and smoking and, more specifically, to a red clay kiln for roasting and smoking which is able to freely and continuously provide roasted dishes by roasting with fire and smoked dishes using smoke for food including byproducts of meat and tuna; and continuously perform the transfer of smoke and heat without blocking by controlling the temperature in a process of roasting and smoking. The present invention provides flame and performs roasting and smoking by comprising a red clay body whose inside is divided. The red clay kiln for roasting and smoking comprises: an oven which is installed on the bottom of the red clay body and has a flame unit in a flame space; a roasting space which is positioned in the upper part of the oven and has an outlet connection piece in a space formed in the upper part of a roasting plate; a smoking space which is formed in the upper side of the roasting space and is divided into first, second, and third spaces through first, second, and third plates where outlet connection pieces are respectively connected; and a flame exhaust pipe to which the outlet connection piece is connected and which has a control wing installed at a front end of the outlet connection piece for controlling the temperature by rotating in a control shaft inside. In the roasting space, a first flame hole is formed in any one direction among four directions of the roasting plate installed in the upper side of the flame space, a roasting net is installed inside, the outlet connection piece is formed to be connected to the flame exhaust pipe, and then a roasting entrance is installed in the front side.
본 발명은 구이와 훈제용 황토 가마에 관한 것으로, 더욱 상세하게는 고기와 참치의 부산물 등 음식을 불로 구워서 만든 구이와 연기를 사용해 훈연 등을 수행하는 훈제요리를 자유롭게 연속해서 수행할 수 있도록 하며, 구이와 훈제를 수행하는 과정에서 온도를 조절하고 연기와 온도의 전달이 막히지 않고 이루어지도록 하는 구이와 훈제용 황토 가마에 관한 것이다.이러한 본 발명은 황토몸체로 이루어지며 내부를 구획해 화염을 제공하여 구이 및 훈제가 이루어지도록 하본 발명은 황토몸체로 이루어지며 내부를 구획해 화염을 제공하여 구이 및 훈제가 이루어지도록 하되;상기 황토몸체의 바닥에 설치하며 화염공간에 화염부를 갖는 화덕과; 상기 화덕의 상측에 위치하며 구이판의 상부에 형성된 공간에 배출 연결구가 형성되는 구이공간과; 상기 구이공간의 상측으로 형성되며 제1, 2, 3 판을 통하여 제1, 2, 3 공간으로 구획되며 배출 연결구가 각각 형성되는 훈제공간과; 상기 배출 연결구가 연결되며 내부에 조절축으로 회전하며 온도를 조절하는 조절날개가 배출 연결구의 선단에 설치되는 화염 배기관으로 이루어지는 구이와 훈제용 황토 가마에 있어서,상기 구이공간은 화염공간의 상측에 설치한 구이판의 사방향 중 어느 한 방향에 제1 화염구가 형성되고 내부에 구이망이 더 설치되며 화염 배기관과 연결되는 배출 연결구가 형성된 후 전방에 구이입구가 설치되는 것을 특징으로 하는 것이다.
