Manufacturing Method of Waxy Corn Makgeolli Using Mechanochemical grinding
The present invention, by applying a mechanical shock, grinding, and friction, which is mechanochemical, to wheat and glutinous corn through a grinding device, relates to a producing method of glutinous corn makgeolli (unrefined rice wine) using a grinding-type grinding that enables the production of makgeolli having a more double effective than a simple glutinous corn or a glutinous corn extract, an improved fermentation efficacy, and an improved flavor. The producing method comprises: a step of separating; a step of processing; a step of making; a step of producing an extract; a step of producing an activated yeast; a step of producing a fermented yeast; a step of steaming; a step of producing a fermented product; and a step of filtering.
본 발명은 밀과 찰옥수수를 분쇄장치를 통해 기계화학적인 기계적 충격, 분쇄, 마찰을 가함으로써, 단순 찰옥수수 또는 찰옥수수 추출물보다 배가된 효과와, 향상된 발효 효능, 향상된 풍미를 갖는 막걸리를 제조할 수 있도록 하는 분쇄식 분쇄를 활용한 찰옥수수 막걸리 제조방법에 관한 것이다.
