The aim of this study is to present guidelines for planning and building Institutional Kitchens for Training Centers, appropriate to the economic and technical conditions in developing countries. The guidelines are based on the results of a field study in Tanzania, discussions with colleagues, as well as the author's professional experience as an architect in Sweden and Tanzania.
