The invention discloses a multi-axis multi-dimensional water jet rail polishing method and system. The method comprises the steps that actual working condition data of a rail are detected through a rail visual detection unit and fed back to a central processing unit; the central processing unit calculates the positioning data of the slope repairing water jet cutter or the repairing water jet cutters on the two sides of the rail according to the actual working condition data of the rail and the section contour data, set by referring to the standard rail, of the repaired rail; the central processing unit sets and generates a motion program according to the positioning data and transmits the motion program to the master controller, and the master controller controls a first servo motor set on each multi-axis slope repairing mechanism and/or a second servo motor set on each rail two-side repairing mechanism to act according to the motion program. And meanwhile, a fine adjustment value is set according to positioning data, and the optimal grinding effect is achieved while multi-axis and multi-dimensional grinding of the track is achieved.
