The invention relates to a freezing device with the adjustable freezing length and position and a using method. The device is composed of a freezing module and a control module. A liquid inlet pipe and a liquid outlet pipe which are adjustable in freezing length and position are inserted into the two ends of a freezing pipe in the freezing module respectively, the inner space of the freezing pipe is divided into three sections, namely a freezing section located in the middle and heat preservation sections located on the two sides respectively, and the freezing length and position of the freezing section are adjusted by changing the depth of the liquid inlet pipe or the liquid outlet pipe inserted into the freezing pipe. The liquid inlet pipe and the liquid outlet pipe are connected with the freezing station, and the heat preservation sections on the two sides are connected with the control module. Compared with an existing manual stratum freezing device, the device can change the length and the position of a freezing section in the freezing process, and unequal-thickness dynamic freezing control is achieved.
