The invention discloses a preparation method of a gypsum retarder with wide pH adaptability, which comprises the following steps: S1, adding a protein raw material, an alkaline substance and tap water into a reaction kettle according to a mass ratio, carrying out reflux reaction for a period of time under a certain temperature condition, and cooling to room temperature to obtain a hydrolyzed protein solution; s2, adding a certain amount of acid substances to adjust the pH to obtain mother liquor of the hydrolyzed protein gypsum retarder; s3, conveying the prepared mother liquor of the hydrolyzed protein gypsum retarder into another reaction kettle, introducing organic acid, stirring until the mother liquor is dissolved, and cooling to room temperature; and S4, conveying to a spray drying tower, atomizing and spraying from the top, controlling the temperature of a discharge port of the spray drying tower, and sieving to obtain the powdery hydrolyzed protein gypsum retarder. The cement retarder has the advantages of high retarding efficiency, small influence on the negative strength of gypsum and wide adaptability.
