The invention relates to a construction method and structure of an immersed tube tunnel using gravity type crimping, and the construction method comprises the following steps: excavating an immersed tube tunnel foundation trench, installing an immersed tube in the immersed tube tunnel foundation trench, and marking the immersed tube as an installed immersed tube; a sealing gasket is arranged at the end of the installed immersed tube or the end of the next immersed tube in advance; sinking the next immersed tube until the hinge rotating part at one end of the next immersed tube is connected with the hinge fixing part at one end of the installed immersed tube; the immersed tube continues to sink, the hinge rotating part rotates around the hinge fixing part, the next immersed tube rotates and sinks under the action of gravity, the sealing gasket generates compression deformation, and then sealing is achieved; marking the next immersed tube as an installed immersed tube; and by parity of reasoning, the next immersed tube is constructed until the construction is finished. The sealing device has the beneficial effect that a good sealing effect can be achieved under the conditions of shallow water and insufficient water pressure in areas with small water pressure.
