The invention provides a hydraulic control system, an excavator and an excavator control method, and relates to the technical field of excavators. The hydraulic control circuit of the excavator is optimized to a certain extent to improve the stability of the hydraulic control system. The hydraulic control system comprises an engine, a transfer case, variable pumps, a control valve, a walking powerdevice, a rotary power device and a plurality of oil cylinders. A plurality of variable pumps are connected with the engine through the transfer case correspondingly. One of the plurality of variablepumps is connected with the walking power device, one variable pump is connected with the rotary power device, the other variable pumps are connected with the plurality of oil cylinders each to each,and the control valve is connected with the plurality of variable pumps to control the work of each variable pump.
