The invention provides a temperature-controllable pickled Chinese cabbage production device. The temperature-controllable pickled Chinese cabbage production device comprises a constant-temperature room, a placing frame and sterilization treatment equipment, wherein the placing frame is mounted and placed in the constant-temperature room; the sterilization treatment equipment is arranged at an inlet of the constant-temperature room; the sterilization treatment equipment comprises an air flow system which is in up-down convection, and is provided with a sterilization spraying device; a changingroom, a sterilization spraying room and an isolation room are arranged in sequence from outside to inside; the air flow system is arranged in the isolation room; and the sterilization spraying deviceis arranged in the sterilization spraying room; and sterile clothes are stored in the changing room. By adopting the temperature-controllable pickled Chinese cabbage production device provided by theinvention, the problems in a pickled Chinese cabbage fermentation process that the temperature is not uniformly controlled, the fermentation is excessive or the content of nitrate is great so that thequality of pickled Chinese cabbages is influenced are effectively solved; and the pollution caused by infectious microbes is convenient to reduce, a fermented thallus community is guaranteed and thefermentation effect is improved, so that the large-batch production of the pickled Chinese cabbages is guaranteed and the production and fermentation efficiency and quality are improved.
