The invention discloses a stair assembling structure and an assembling method. The stair assembling structure comprises a step-shaped steel plate, the baffles are vertically arranged on the outer sides of the vertical plates, the top surfaces of the baffles are higher than the upper surface of the horizontal plate, and the heights of the baffles can be adjusted; the side plates are arranged on the two sides of the step-shaped steel plate in the step extending direction; the concrete pouring layer is arranged on each horizontal plate of the step-shaped steel plate; and the concrete coating layer is arranged on one side, far away from the vertical plate, of each baffle plate. When the stair splicing structure is applied, concrete is directly poured on each horizontal plate after the stair-shaped steel plates are built, and a formed concrete pouring layer is used for treading; and the baffles and the side plates are arranged for limiting during concrete pouring, concrete is prevented from overflowing, and the integrality of the concrete pouring device can be improved through the arrangement of the concrete coating layer. The step-shaped steel plates do not need to be dismantled, the concrete and the step-shaped steel plates are solidified into a whole, the structure is stable, and building is convenient.
