The invention relates to the technical field of bridge engineering, and provides an old bridge dismantling and new bridge building method which comprises the steps that 1, auxiliary support construction is conducted on one side of an old bridge; 2, guide columns are constructed on the two sides of a navigation hole channel of the old bridge; a guide plate and an elastic reset piece used for controlling the guide plate to rotate and reset are rotationally arranged on the guide column, the guide plate can be attached to the outer side of a hull of the ship and can rotate relative to the horizontal plane, and the guide plate faces the navigation hole channel; and 3, a supporting foundation and a gantry crane are constructed and installed, the gantry crane stretches across the width direction of the old bridge and slides in the length direction of the old bridge, the supporting foundation comprises a plurality of first steel pipe piles fixed to the riverbed, and the first steel pipe piles are arranged in the length side direction of the old bridge at intervals, avoid the navigation hole channel and are located between the guide columns and the old bridge. On the basis, the effects that the influence of a ship on the bridge dismantling support can be reduced conveniently, and meanwhile abrasion to the ship is reduced can be achieved.
