The preparation method of the food additive calcium hydroxide comprises the following steps: obtaining a heat preservation container, and selecting kiln calcined lime as a raw material; the method comprises the following steps: putting selected kiln calcined quicklime into a heat-insulating container, adding deionized water, and sealing the heat-insulating container for digestion reaction; after the digestion reaction is finished, spraying ethanol to a digestion product; and drying the digestion product in a vacuum oven. Calcium hydroxide is produced from commercially available kiln-fired calcium oxide, and the raw materials are cheap and easy to obtain; no surfactant is used in the production process, no organic matter is attached to the surface of the prepared calcium hydroxide, the purity of the calcium hydroxide is improved, and the calcium hydroxide can be safely used as a food additive; after gas escaping from the vacuum drying oven is condensed and collected, ethanol is recovered through rectification for cyclic utilization, the ethanol utilization rate is high and is fully utilized, the raw material utilization rate is increased, and the cost is reduced.
