A dry-mix composition containing (a) gypsum powder, and (b) cellulose ether agglomerates, wherein the cellulose ether is methylcellulose, hydroxyethyl methylcellulose, hydroxypropyl methylcellulose, hydroxypropyl cellulose, hydroxyethyl cellulose or mixtures thereof; and a method for using cellulose ether agglomerates in a dry-mix composition to cause thickening and water retention with little clumping upon hydration of the dry-mix composition to a mortar, the method comprising including cellulose ether agglomerates in a dry-mix composition comprising gypsum powder.
