To more stably produce a fermentation-dried product.SOLUTION: A fermentation-drying system has: a hermetic-type fermentation-drying apparatus which performs fermentation-drying treatment for a fermentation raw material including sewage sludge; an exhaust line which allows exhaust gas from the fermentation-drying apparatus to flow; a concentration information acquiring part which acquires information regarding the concentration of carbon dioxide contained in exhaust gas in the exhaust line; and a rate calculation part which calculates generation rate of carbon dioxide in the fermentation-drying apparatus from the information regarding the concentration of carbon dioxide which is acquired in the concentration information acquiring part.SELECTED DRAWING: Figure 1
