To provide a cement clinker production system capable of stably producing cement clinker even when the amount of meat-and-bone meal and sludge to be processed is increased.SOLUTION: A cement clinker production system 200 comprises (a) a storage tank 10 for storing a first cement raw material containing meat-and-bone meal and sludge, at least one of which is a major component of the first cement raw material and (b) a cement clinker firing apparatus 100 for firing the first cement raw material and a second cement raw material that contains meat-and-bone meal and sludge in amounts lower than those in the first cement raw material to produce cement clinker. The cement clinker production system 200 is equipped with (i) a detection device 20 for detecting at least one of the following: color of the first cement raw material, odor, and gas components generated from the first cement raw material, and (ii) a regulator 40 for adjusting the operating conditions of the cement clinker firing system 100 based on the results detected by the detection device 20.SELECTED DRAWING: Figure 1
