Galactomannan—Borate Systems: A Complexation Study
Abstract We study the formation of weak reversible gels of galactomannans induced by borate complexation. Phase diagrams observed in water and in 1M NaCl are presented. To obtain information about the crosslinking mechanism involved in the gel formation, interactions of galactomannan and glycoside models with borate are studied by 11B-NMR. Evidence of the existence of five-member ed and six-member ed ring mono-and di-complexes is given. The corresponding complexation constants and peak assignments are reported. The mono-complexation constant, K1, has been determined for guaran in 1M NaCl from dialysis experiments: K1 = 11·4 litres mol-1. This value is close to those reported for glycoside models.
