The invention discloses a foam-controlling monomer, a polycarboxylate water reducer and preparation methods of the foam-controlling monomer and the polycarboxylate water reducer. The foam-controlling monomer is prepared by reacting unsaturated acid, an amphiphilic monomer, a catalyst, a water carrying agent and a polymerization inhibitor; and polymerization reaction is carried out on a polyether monomer, a unsaturated adsorption monomer, the foam-controlling monomer and the catalyst to prepare the polycarboxylate water reducer. The foam-controlling monomer is used in the polycarboxylate water reducer, the obtained polycarboxylate water reducer has a good foam control effect, the size and distribution of bubbles in a concrete structure can be effectively controlled, and the compressive strength and durability of concrete are guaranteed; when the concrete is newly mixed, the workability and the constructability of the concrete are ensured; and bubbles on the concrete surface can be reduced, and the appearance quality of the hardened concrete surface is improved.
