To more stably produce a fermentation-dried product.SOLUTION: A fermentation-drying apparatus has: a container which houses a fermentation raw material including sewage sludge, and performs fermentation-drying treatment while agitating the fermentation raw material; air feeding means for feeding air into the container; an air feeding information acquiring part which acquires information regarding the temperature of gas fed by the air feeding means and an air feeding amount; exhaust means for performing exhaustion from the container; an exhaust information acquiring part which acquires information regarding air exhausted by the exhaust means and an exhaust amount; and a control part which controls the air feeding means and the exhaust means, in which the control part calculates fermentation heat quantity from the information acquired in the air feeding information acquiring part and the exhaust information acquiring part, and controls the air feeding means on the basis of the fermentation heat quantity and exhaust temperature.SELECTED DRAWING: Figure 3
