The invention discloses a production method of citric acid gypsum. The production method comprises the steps of (1) reacting calcium hydrogen citrate with sulfuric acid to prepare a citric acid-mixed citric acid gypsum raw material; (2) adding water into the citric acid gypsum raw material obtained in the step (1) for size mixing, then adding sulfuric acid, and controlling the PH to be 2.1-2.3, wherein the mass ratio of the citric acid gypsum raw material to the water is 7: 13, and crude citric acid gypsum is obtained through filtering; (3) carrying out instantaneous airflow drying on the crude citric acid gypsum obtained in the step (2) at the temperature of 500-600 DEG C; and (4) carrying out steam calcination for 40-50 minutes by using a steam calcining machine, and obtaining a citric acid gypsum finished product when the pH value of the material is 7. The obtained citric acid gypsum is high in structural strength, citric acid and crystal water mixed in the citric acid gypsum are removed to the maximum extent, and the residual amount of the citric acid is small.
