The subtropical zone mass concrete construction and maintenance method comprises the steps that cooling water pipes are laid on the upper surface of concrete in an S shape; a vault frame is built above the concrete area, and a water distribution pipe communicated with the cooling water pipes is horizontally arranged at the top of the frame; a double-side heat insulation air bubble film is laid on the upper portion of the vault frame; water outlets are communicated into a water storage container, a water pump is arranged in the water storage container, and a water outlet pipe of the water pump is connected with the cooling water pipes to form a circulating pipeline; and the water in the water storage container is cooled at the preset minimum power through refrigeration equipment. A three-dimensional heat preservation and cooling system is constructed, and a closed heat insulation space is formed by the vault frame and the double-side heat insulation air bubble film; the refrigeration power of the refrigeration equipment is adjusted by detecting the temperature in the heat insulation space, and therefore it is ensured that the temperature in the heat insulation space is constant.
