The invention relates to a stripping system and a stripping method for asphalt on the surface of an asphalt mixture. The stripping system comprises a crushing device and a drum screen, wherein the crushing device is used for crushing the recycled asphalt mixture; wherein the drum screen is used for screening the crushed asphalt mixture and stripping asphalt on the surface of the asphalt mixture and comprises a screen drum and an abrasive supply device, and the screen drum comprises a fine material screening area, a medium material screening area and a coarse material screening area which are sequentially arranged in the flowing direction of the asphalt mixture; a grinding material supply device is used for supplying grinding materials to the medium material screening area and the coarse material screening area and comprises a grinding material storage tank, a grinding material conveying assembly and an air conveying assembly; one end of the abrasive conveying pipe is connected with an abrasive storage tank, the other end of the abrasive conveying pipe extends to the medium material screening area through the coarse material screening area, and nozzles are arranged in the extending direction of the abrasive conveying pipe at intervals; the air conveying assembly is connected with the abrasive conveying pipe, so the abrasive in the abrasive conveying pipe is conveyed into the medium material screening area or the coarse material screening area through a spray head, and asphalt on the surface of the asphalt mixture is stripped.
