The invention discloses a gravity center control system, an excavator and an excavator gravity center control method. The gravity center control system comprises a rotary table, a gravity center detector, a servo motor pump, a balance weight mechanism and a controller. The controller is respectively connected with the gravity center detector and the servo motor pump, and is used for receiving a gravity center position signal from the gravity center detector and controlling the servo motor pump to steer, so that liquid in the first liquid weight box and/or the second liquid weight box flows to the solid-liquid mixing weight box; or the liquid in the solid-liquid mixing weight box flows to the first liquid weight box and/or the second liquid weight box. The gravity center control system is simple in structure and convenient to operate, manual mode adjustment and automatic mode adjustment of the gravity center of the whole machine can be achieved through the gravity center control method, the stability of the whole machine is effectively improved, and multi-working-condition adaptability and multiple purposes of the excavator are achieved.
