The invention provides a gypsum calcining system and a gypsum calcining method. The gypsum calcining system comprises: a feeding system; a calcining device comprising a first-stage calcining device and a second-stage calcining device; a modifier; a middle conveying device; a heat source system for providing a heat source medium, wherein an air outlet of at least one of the first-stage calcining device and the second-stage calcining device is connected with the heat source system through a backflow flue gas pipeline, and the heat source medium is mixed with backflow flue gas from the backflow flue gas pipeline to provide required heat for the first-stage calcining device and the second-stage calcining device; and a denitration reactor. The gypsum calcining method adopts the gypsum calciningsystem and comprises the following steps: feeding desulfurized gypsum into the first-stage calcining device, and drying; feeding the desulfurized gypsum dried by the first-stage calcining device intothe second-stage calcining device, calcining, feeding the calcined gypsum powder calcined by the second-stage calcining device into the modifier, and grinding; and mixing the heat source medium provided by the heat source system with the return flue gas to carry out denitration reaction and provide heat.
