The embodiment of the invention provides a ceramic sintering method and a ceramic piece manufactured by adopting the ceramic sintering method. The ceramic sintering method comprises the following steps: placing a ceramic green body on a setter plate; the ceramic green body is subjected to temperature rise stage sintering, the temperature rise stage comprises a plurality of temperature rise time periods, and at least one temperature rise time period comprises a temperature rise sub-time period and a first temperature adjustment sub-time period; the heating rate of the first temperature adjustment sub-period is smaller than that of the heating sub-period; the ceramic green body is sintered in a cooling stage, the cooling stage comprises a plurality of cooling time periods, and at least one cooling time period comprises a cooling sub-time period and a second temperature adjusting sub-time period; the cooling rate of the second temperature adjusting sub-period is smaller than that of the cooling sub-period. According to the ceramic sintering method and the ceramic part manufactured by adopting the ceramic sintering method, the tensile strength of the ceramic part can be improved, the porosity is reduced, and the residual stress is reduced, so that the surface defects of the ceramic part can be reduced, and the processing property of the ceramic part is improved.
