The invention discloses a temperature measuring and cooling system and method for pouring mass concrete. The temperature measuring and cooling system comprises a cooling water pipe, an internal temperature sensor, a circulating pump, an external temperature sensor, a temperature controller and a temperature control switch, wherein the cooling water pipe and the internal temperature sensor are arranged in a mass concrete pouring body; the cooling water pipes are in a square wave shape, and the multiple cooling water pipes are arranged in the vertical direction at equal intervals. The circulating pump is connected with the cooling water pipe; a plurality of groups of internal temperature sensors are equidistantly arranged along the left-right direction, and each group of internal temperature sensors comprises a plurality of internal temperature sensors; the input end of the temperature controller is connected with the internal temperature sensor and the external temperature sensor; the input end of the temperature control switch is electrically connected with the output end of the temperature controller, and the output end of the temperature control switch is electrically connected with the circulating pump; when the internal and external temperature difference of the large-volume concrete pouring body is too large, the interior of the large-volume concrete pouring body can be automatically cooled, and automatic control over the internal and external temperature difference in the large-volume concrete pouring process is achieved.
